Recipe: Crustless, Cheeseless Quiche
I know this might sound very bizarre but ever since living in France and becoming GF/DF I have wanted to find a recipe for a quiche that I could make. I found a recipe from: Food Loves Writing.com Her recipe has some unusual twists to it but they all work together. With the one I revamped, I made it more for breakfast or dinner.
1 tablespoon oil
1 small white or yellow onion, chopped
1 red bell pepper, diced
4 slices of cooked bacon
1/2 cup chicken stock
3 tablespoons Pamela’s GF Baking Flour
1/2 teaspoon baking powder
3/4 teaspoon salt
1/2 teaspoon paprika
1/2 teaspoon Fresh thyme
1/8 teaspoon black pepper
Preheat the oven to 350 degrees F. Grease the bottom and sides of a 9-inch pie pan. In a fry pan on medium heat, cook onions and peppers until soft. In a separate bowl, mix together the eggs, chicken stock, spices, flour, and baking powder. Stir in the sautéed vegetables and stir until well combined.
Pour the egg and vegetable mixture into the prepared pie pan, and bake for 45-50 minutes, or until a toothpick inserted comes out clean. Remove from the oven and allow the quiche to set for at least 5 minutes.
